Tahini Lemongrass Noodles

You'll need:

  1. Wide rice noodles (or any noodles of your choice) - cooked according to package instructions

  2. 2 cups hot water

  3. 1/3 red onion - diced

  4. 1.5 Tbsp crushed garlic

  5. 1.5 Tbsp Better Than Bouillon no chicken base

  6. 2 Tbsp fresh lemongrass - chopped

  7. 3 thai chili peppers - diced

  8. 1/3 packet your favorite plant-based ground 'beef'

  9. 1 cup fresh shiitake mushrooms

  10. 1.5 tsp Chinese 5 spice seasoning

  11. 2.5 Tbsp Tahini

  12. A handful of fresh Kale leaves

  13. Fresh scallions - chopped

  14. Fresh Thai basil

  15. Sprinkle of ground black pepper

  16. Sprinkle of crushed red pepper flakes

Make it:

  1. To a nonstick sauté pan on medium heat, add 1/2 cup hot water, onions, and garlic

  2. Allow to sauté for a couple minutes until onions are a little translucent

  3. Add chopped lemongrass and Thai chili peppers and mix well

  4. Stir in plant-based 'beef' crumbles. Let it cook for some time to allow the 'beef' to fully thaw in the pan

  5. Add mushrooms and stir to combine

  6. Stir in 5 spice seasoning

  7. Next, add tahini and thin with 1.5 cups of hot water to allow it to fully dissolve

  8. Taste and adjust seasonings as desired

  9. Cover with lid and allow to cook on medium low heat for about 3 more minutes

  10. Pour over cooked noodles

  11. Garnish with scallions, fresh basil leaves, ground black pepper and red pepper flakes

  12. Serve while hot and enjoy :-)
